Our inaugural Contigo Ranch Community Dinner brings together two beloved local partners, Prochnow Vineyard and the Hill Country Herb Garden, for a thoughtfully curated, multi-course dining experience featuring locally sourced products like greens from Mikey's Garden, pecans from Fredericksburg Pecan Company, dessert from Zuly's bakery, bison from Roam Ranch, and Caliche Coffee. 

This is more than dinner. It’s a gathering of our community to celebrate our community. The Experience As the sun begins to set over the ranch, you’ll be welcomed with passed bites and Prochnow’s Sangiovese Rosé, followed by a seated, chef-driven menu expertly paired with select wines from Prochnow Vineyard. 

The evening includes: 

Passed Welcome Bites Paired with Sangiovese Rosé 

• Blackened Shrimp Crostini 

• Pear & Brie Puff Pastry First Course Paired with Roussanne Roasted beet salad with goat cheese, candied pecans, arugula, and Dijon–Picpoul vinaigrette 

Second Course Paired with Picpoul Blanc Garlic lemon mahi filet with baby squash medley 

Third Course Paired with Cabernet Sauvignon Bison Osso Bucco from Roam Ranch - 

Sides TBA 

Dessert Served with Caliche Coffee Dark Chocolate & Raspberry Mini Entremet by Zuly's Bakery
