Night in Old Fredericksburg State Championship BBQ Cook Off is sponsored by The Gillespie County Fair & Festivals Association. July 18 - 19, 2025. Check-in: Noon on Friday July 18, 2025. Award Ceremony will be Saturday July 19, 2025 at 4 p.m.. $200 entry fee for all meats. Brisket, Chicken, Pork Ribs (spare) Pulled Pork & Jackpot Beans. $25 for Jackpot Beans. Payout 80% Awards: 1st - 3rd on meats, 1st on beans.
