Opa’s Smoked Meats in Fredericksburg, Texas has been handcrafting Old World German-style sausages and slow-smoked meats in the Texas Hill Country for over 78 years. Attached to our production facility, Opa’s Deli & Market is where the brand comes to life for our customers. It’s a full-service deli, specialty food market, and gift shop, and visitors come from across the country to experience it. The team behind our counter is a big part of why they remember us.


This role is based entirely within the Deli & Market. You will be the face of the brand, working with our finished-smoked products alongside other fresh and prepared foods to deliver an experience that reflects 78 years of craftsmanship.


We’re looking for a full-time Deli & Charcuterie Specialist who takes real pride in food, presentation, and professionalism. This is a hands-on role working directly with premium smoked meats, raw product, charcuterie board builds, deli production, and guest service.


What You’ll Be Doing


  • Handling and preparing raw meats and smoked products safely and with care
  • Building premium charcuterie boards with an eye for detail, balance, and presentation
  • Preparing deli sandwiches and contributing to daily food production
  • Stocking and rotating inventory using FIFO standards
  • Conducting accurate inventory counts and maintaining product integrity
  • Receiving vendor deliveries and verifying product accuracy and quality
  • Keeping your workspace clean, organized and sanitary, without being asked
  • Following all applicable health code and food safety regulations
  • Delivering professional, knowledgeable, and genuinely warm customer service


What We’re Looking For


  • Previous food industry experience required. Deli, restaurant, butcher, catering, or kitchen background preferred
  • Comfortable and confident working with raw meats
  • Solid understanding of food safety practices and health code standards
  • Able to work efficiently in a fast-paced, high-quality environment
  • Strong work ethic with sharp attention to detail
  • Reliable transportation and consistent punctuality. every shift, every time
  • Ability to commit to a schedule prepared one month in advance (emergencies understood; habits are not)
  • Positive, team-oriented attitude with strong guest awareness


This is not an entry-level position. We hold ourselves to a high standard at Opa’s, and we need someone who holds themselves to one too.
